Located in the heart of Barrie`s famous Park Place entertainment and shopping center is a family run business specializing in fresh Italian food and pastries. We combine the concept of a restaurant with an artisan bakery and market bringing our clients the best products imported straight from Italy.

We are seeking an innovative and experienced Italian Pastry Chef specializing in traditional Panettone, authentic Italian baked goods and sweets as well as custom wedding cakes.

Duties:

• Prepare and bake pastries, cakes and/or specialty orders
• Create new and reinvent old Italian recipes with a modern twist
• Plan desert menus and ensure food meets quality standards
• Prepare dough for Panettone, cakes, pies, breads, rolls and sweet goods, batters for pastries and
cakes and icings and frostings according to Italian recipes or special customer orders
• Prepare special orders for customers with food allergies or intolerances
• Consult with clients regarding weddings, banquets and specialty functions
• Supervise bakers, kitchen and counter staff
• Provide training to baking personnel on traditional Italian baking techniques and methodologies
• Maintain records of food costs, consumption, labor needs and inventory
• Order food and kitchen supplies as needed
• Ensure compliance with applicable health codes and regulations, including establishing cleaning
schedules for equipment, work areas and storage.

• Italian breads and rolls
• Italian desserts and pastries
• Wedding and specialty cakes
• Cake decorating

Position Requirements / Skills:

• Diploma or Certificate specializing in Italian Baking and Pastry Arts or equivalent experience
• Minimum 3 years of experience working in high-volume kitchens as an Italian pastry chef
• Experience making authentic Italian Panettone, baked goods and sweets is required
• Demonstrated knowledge of Italian baking techniques and practices is required
• Attention to detail and accuracy to ensure quality and cost control is required
• Keeping up to date on Italian baking trends
• Ability to effectively communicate with staff and customers
• Must be multi tasker, dependable, reliable, organized, flexible, take initiative and a team player
• Reference letters attesting to experience as an Italian Pastry Chef are required.

Working Conditions:

• High-paced and high-pressure environment
• Physically demanding, as must be standing on feet all day
• Exposure to hot ovens
• Routinely lifting heavy items
• Working to meet tight deadlines

Work Hours:

• Early start at 5AM to 1:30PM from Wednesday to Sunday between 40-44 hours per week, with occasional
overtime.

Must be able to work weekends and holidays
