Job Description
· Manage preparation of food and cooking tasks in the restaurant
· Discuss with clients, customers and guests regarding their food preferences according to their choice, occasion or party
· Establish schedules to ensure there is sufficient help throughout and to enable timely delivery of food items
· Prepare menus and make sure food meets quality standards
· Plan requirements of items used in food preparation and labour costs accordingly
· Supervise performance of other cooks
· Inspect work areas, supplies, ingredients, and cooking equipment to ensure constant conformance to regulatory standards
· Assist in hiring procedures including cooks and kitchen employees when there is a need
· Monitor sanitation practices to ensure that employees strictly adhere to the standards and regulations of cleanliness

Tasks
- Maintain records of food costs, consumption, sales and inventory
- Analyze operating costs and other data
- Demonstrate new cooking techniques and new equipment to cooking staff
- Create new recipes
- Instruct cooks in preparation, cooking, garnishing and presentation of food
- Prepare and cook complete meals and specialty foods for events such as banquets
- Supervise cooks and other kitchen staff
- Prepare and cook food on a regular basis, or for special guests or functions
- Prepare and cook meals or specialty foods
- Requisition food and kitchen supplies
- Arrange for equipment purchases and repairs
- Consult with clients regarding weddings, banquets and specialty functions
- Estimate food requirements and food and labour costs
- Plan and direct food preparation and cooking activities of several restaurants
- Plan menus and ensure food meets quality standards
- Recruit and hire staff
- Supervise activities of sous-chefs, specialist chefs, chefs and cooks
- Train staff in preparation, cooking and handling of food
