We are looking for a talented and experienced Sous Chef to join our team and contribute to our culinary excellence. As the Sous Chef at Squires Gastro Pub, you will play a vital role in the kitchen, assisting the Executive Chef in overseeing daily operations and ensuring the delivery of high-quality dishes to our guests. You will have the opportunity to contribute your expertise in pasta dishes, bringing additional culinary depth to our fusion menu. Your leadership and culinary skills will help maintain a smooth and efficient kitchen while upholding our high standards.

Duties:
o Assist the Executive Chef in managing daily kitchen operations and ensuring efficient workflows.
o Prepare and cook dishes according to recipes and standards, maintaining consistency and quality.
o Help manage inventory and order supplies as needed to maintain adequate stock levels.
o Collaborate with the Executive Chef to create innovative and exciting dishes that blend Indian, British, and pasta cuisine.
o Contribute to menu planning, taking into account seasonal ingredients and customer preferences.
o Execute dishes to the restaurant's high standards, focusing on presentation and taste.
o Lead, train, and mentor kitchen staff, fostering a positive and productive work environment.
o Provide guidance and support to team members to ensure they perform at their best.
o Assist in creating staff schedules and managing labor costs effectively.
o Monitor food quality and presentation, ensuring all dishes meet the restaurant's standards.
o Follow health and safety guidelines and ensure compliance with local, state, and federal regulations.
o Conduct regular inspections of food preparation and storage areas.
o Work closely with front-of-house staff to ensure smooth and efficient service to guests.
o Communicate effectively with other kitchen staff and management to maintain a seamless operation.

Position Requirements / Skills
o Completion of secondary school required.
o Formal culinary training and/or relevant certifications in culinary arts or hospitality management preferred.
o Credentials in health and safety training are required.
o Previous experience as a Sous Chef or in a similar role, with a strong background in Indian, British, and pasta cuisine.
o 2+ years of experience working in high-volume kitchens in a similar capacity, with a proven track record of delivering high-quality dishes and managing kitchen operations effectively.
o Proficiency in creating pasta dishes and a thorough understanding of pasta-making techniques.
o Strong culinary skills and creativity in blending different culinary traditions.
o Excellent attention to detail and the ability to follow recipes accurately and to handle allergy requests.
o Ability to contribute to the creation and refinement of menus featuring a diverse range of dishes from British, Indian, and pub-style cuisines, including pasta dishes, balancing innovation with respect for traditional recipes.
o Strong leadership and communication skills.
o Knowledge of local, state, and federal health and safety regulations.
o Willingness to work flexible hours, including evenings, weekends, and holidays, as required by the demands of the role and the operational needs of the establishment.
o Effective communication skills to collaborate with the management team, convey expectations to staff, and liaise with suppliers.
o Up-to-date knowledge of culinary trends and optimization of kitchen processes.
o Strong problem-solving skills to address kitchen challenges promptly and resolve issues that may arise during service.

Working Conditions:
o High-paced, high-pressure environment to meet orders in a timely manner.
o Physically demanding, as must be standing on feet all day.

Wages: $65,208 CAD / yearly or $28.50 per hour and overtime rate of $42.75 per hour after 44 hours of work per week;
Work Hours: 44 hours per week, with frequent overtime. Shift work, including early mornings, and evening shifts. Must be flexible to work weekends and holidays. Must be flexible.
