• Trades certificate or diploma in Baking and Pastry Arts or equivalent experience

Experience
• 3+ years of experience in preparing bakery products (bread, cake and/or other pastries)
• 2+ years of supervisory experience in a pastry/bakery setting, or supermarket/food production retail chain store

Skills and Duties

• Maintain records of food costs, consumption, sales and inventory
• Analyze operating costs and other data
• Create new recipes
• Instruct cooks in preparation, cooking, garnishing and presentation of food
• Prepare and cook meals or specialty foods
• Requisition food and kitchen supplies
• Arrange for equipment purchases and repairs
• Plan menus and ensure food meets quality standards
• Recruit and hire staff
• Train staff in preparation, cooking and handling of food
• Supervise baking personnel and kitchen staff
• Bake mixed dough and batters
• Train staff in job duties, sanitation and safety procedures

Additional Skills and Duties

• In charge of production of all bakery products (bread, cake and other pastries) produced and sold at the store
• Oversee, plan and manage all ingredients and dough for bread, cakes, rolls, mousse, puddings, sweet goods, batters and icings and frostings according to standard operating procedures or special customer orders
• Ensure product (bread, cake and other pastries) quality, inventory levels, and waste management adhere to the Company’s established standards
• Ensure the team accurately executes the baking production process, including but is not limited to mixing flour, dough, cake mixes, and other critical and minute steps for producing various bakery products
• Provide guidance and supervision to the Bakery Production team, ensure fair distribution of work and proper scheduling
• Provide training, deliver disciplinary actions, and offer corrective and positive feedback on staff performance
• Participate in new product research and development, encouraging innovation.
• Ensure timely order and replenishment of inventory
• Manage and follow up on the cleanliness, hygiene, equipment, and tools maintenance, and ensure workplace safety in the production area
• Address customers’ inquiries
• Provide hands-on demonstration of new products to the Bakery Production team as required
• Support the entire bakery team, lead by example, demonstrate teamwork, and foster good working relationships
